Sweet Potato Puffs
Yield: 6 servings
Ingredients
| 2 | cups | mashed sweet potatoes | |

| 2 | egg yolks, beaten | ||
|
|
|||
| 1 | cup | cream | |
|
|
|||
| 1/2 | teaspoon | salt | |
|
|
|||
| 2 | egg whites, well beaten | ||
|
|
|||
Directions:
Preheat oven to 350 degrees F
Mix potatoes, egg yolks, cream and salt; heat in saucepan. When very hot, remove from heat.
Add egg whites; beat until light. Pile loosely on buttered platter; brush with egg white.
Heat in oven until lightly browned.
